First Use

Ditalini authorized the purchase of an electric rotisserie for the new Weber gas grill, and I’ve been looking around for something to use it on.  Friends recommended I brine and rub a chicken, then cook it on the spit, so that’s what I’m doing.

The chicken is in the brine (3/4 cups kosher salt, 1/2 cup sugar, 3 qts water).  Since it’s a five-pounder I’m soaking it for five hours.  I’ll rinse it off and pat it dry later, rub it with a commercial poultry rub I got from the butcher at the corner Safeway, and let it sit in the fridge overnight.  We’re having company tomorrow night, so I’ll start cooking the chicken sometime tomorrow afternoon.
