Lime<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>4<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"P0DT0H30M0S\"><strong>Time:<\/strong> <span class=\"time\">30 min<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-difficulty\"><strong>Difficulty: <\/strong>medium<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 cup rice<\/li>\n<li>2 cups water<\/li>\n<li>1 tbsp peanut oil<\/li>\n<li>2 boneless chicken breast filets<\/li>\n<li>4 small potatoes<\/li>\n<li>1 can coconut milk<\/li>\n<li>1 tbsp green curry paste<\/li>\n<li>1 small hot chili pepper<\/li>\n<li>1 lime<\/li>\n<li>small red &amp; yellow salad peppers<\/li>\n<li>bamboo shoots<\/li>\n<li>water chestnuts, sliced<\/li>\n<li>straw mushrooms<\/li>\n<li>fresh basil<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Bring water to a boil, reduce heat to simmer, add the rice, cover and let cook for 20-25 minutes.<\/p>\n<p>Cut the chicken and potatoes into bite-size pieces, stir fry in peanut oil until about half cooked, transfer to plate.<\/p>\n<p>Pour coconut milk into pan, heat on medium and let reduce a bit.&nbsp; Whisk in the curry paste.&nbsp; Use a grater to zest the lime and add lime zest to curry mix.&nbsp; Add the chili pepper, thinly sliced (I recommend starting with about half a pepper &#8212; you can always add more chili pepper later if it&#8217;s not hot enough for you).&nbsp; Add chicken and potatoes to curry mix, cover, and let cook about 5 minutes.<\/p>\n<p>Add 4 thin slices of the lime you zested earlier, along with sliced salad peppers.&nbsp; Cook another 2-3 minutes, then add the rest of the ingredients (I used about half a can each of bamboo shoots, sliced water chestnuts, and straw mushrooms).&nbsp;
