The potatoes?  We bake &#8217;em, but still call &#8217;em frites.<\/p>\n<p><div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Crouton&#039;s Chicken Satay w\/Cucumber Salad &amp; Frites<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>2-4<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"P0DT0H40M0S\"><strong>Time:<\/strong> <span class=\"time\">40 min<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-difficulty\"><strong>Difficulty: <\/strong>medium<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><strong>Ingredients<\/strong><\/p>\n<p>Chicken satay<\/p>\n<ul>\n<li>2-3 skinned boneless chicken breasts<\/li>\n<li>1 pkg Lobo Thai Satay Mix<\/li>\n<li>1\/2 cup coconut or regular milk<\/li>\n<li>1 tbsp vegetable oil<\/li>\n<li>2 tbsp chunky peanut butter<\/li>\n<\/ul>\n<p>Cucumber salad<\/p>\n<ul>\n<li>1 cucumber, skin on, sliced thinly<\/li>\n<li>2-3 thin slices red onion<\/li>\n<li>1\/2 serrano or chili pepper, sliced thin<\/li>\n<li>6 tbsp sugar<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>4 tbsp water<\/li>\n<li>4 tbsp vinegar<\/li>\n<\/ul>\n<p>Baked frites<\/p>\n<ul>\n<li>2 medium or 4 small potatoes, sliced w\/skin on<\/li>\n<li>olive oil<\/li>\n<li>salt<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>About three hours before dinner:<\/p>\n<p style=\"padding-left: 30px\">Cut chicken in strips.&nbsp; Mix satay marinade with water per package instructions, coat chicken and let marinate for 2-3 hours.<\/p>\n<p style=\"padding-left: 30px\">Prepare the sweet vinegar dressing according to package directions.&nbsp; Put in cucumber, onion, and chili slices, let marinate in refrigerator for 2-3 hours.<\/p>\n<p>About 30 minutes before dinner:<\/p>\n<p style=\"padding-left: 30px\">Place potato slices on a baking sheet lightly sprayed with Pam, brush with olive oil and sprinkle with salt.&nbsp; Bake at 425 degrees for 25-30 minutes.<\/p>\n<p>About 20 minutes before dinner:<\/p>\n<p style=\"padding-left: 30px\">Prepare satay sauce according to package directions (using coconut or regular milk, vegetable oil, and &#8212; our own innovation &#8212; adding chunky peanut butter).&nbsp; Whisk to smooth consistency, heat on low (do not boil).<\/p>\n<p style=\"padding-left: 30px\">Drain chicken and rinse, then cook in frying pan.<\/p>\n<p><\/div><\/div><br \/>\nSkewers?
