summers ago I delivered fancy motorhomes for a Tucson RV dealership.&nbsp; We&#8217;d frequently drive new motorhomes across the state line into New Mexico so that customers could take title there and avoid Arizona taxes.&nbsp; Whenever we did, we&#8217;d always stop at this little cafe in Lordsburg for green chile stew.&nbsp; Because of that experience, I&#8217;ve always thought of green chile stew as a New Mexico specialty (don&#8217;t bother telling me it&#8217;s not so; I&#8217;m fond of my belief).<\/p>\n<p>This is my adaptation of a common green chile stew recipe.<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Crouton&#039;s Green Chile Stew<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>4<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"1 hr\"><strong>Time:<\/strong> <span class=\"time\">1 hr<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-difficulty\"><strong>Difficulty: <\/strong>medium<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>olive oil<\/li>\n<li>1 lb beef stew meat, cut into 1&#8243; cubes<\/li>\n<li>1 medium to large onion, chopped<\/li>\n<li>3-4 cloves garlic, chopped<\/li>\n<li>3 cans chicken broth<\/li>\n<li>2 large potatoes, peeled &amp; cut into 1\/2&#8243; cubes<\/li>\n<li>salt to taste<\/li>\n<li>red pepper flakes to taste<\/li>\n<li>1 large (27 oz) can green chiles, chopped<\/li>\n<li>1\/4 red bell pepper, seeded &amp; chopped<\/li>\n<li>fresh cilantro to taste, chopped<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat small amount of olive oil in a heavy stock pot and brown the meat, lightly salting it.&nbsp; Remove the meat with a slotted spoon, then brown the onion in the pot with the oil &amp; juice from the meat.&nbsp; When the onions are soft and golden, add the garlic, then the meat, broth, and potatoes.&nbsp;
