{"id":231,"date":"2009-02-24T22:12:55","date_gmt":"2009-02-25T05:12:55","guid":{"rendered":"http:\/\/pwoodford.net\/cookblog\/?p=231"},"modified":"2021-03-03T18:36:41","modified_gmt":"2021-03-04T01:36:41","slug":"croutons-pretty-easy-chicken-noodle-soup","status":"publish","type":"post","link":"https:\/\/pwoodford.net\/cookblog\/?p=231","title":{"rendered":"Crouton&#8217;s Pretty Easy Chicken Noodle Soup"},"content":{"rendered":"<p>I wanted soup for dinner, and enough of it that there will be leftovers.&nbsp; I had chicken, I had noodles.&nbsp; Something told me I should make chicken noodle soup.<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Crouton&#039;s Pretty Easy Chicken Noodle Soup<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>4<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"1 hr\"><strong>Time:<\/strong> <span class=\"time\">1 hr<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-difficulty\"><strong>Difficulty: <\/strong>medium<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 skinned chicken breasts<\/li>\n<li>4 cloves garlic, chopped<\/li>\n<li>1 yellow onion, chopped<\/li>\n<li>4 stalks celery, chopped<\/li>\n<li>3 carrots, peeled &amp; sliced<\/li>\n<li>2 cans chicken stock<\/li>\n<li>1-2 cups water<\/li>\n<li>\u00bd tsp salt &amp; a few peppercorns<\/li>\n<li>\u00bd tsp thyme<\/li>\n<li>1 bay leaf<\/li>\n<li>fresh or dried parsley<\/li>\n<li>\u00bd lb noodles (I&#8217;m using half a box of Campanelle pasta)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Saut\u00e9 garlic, onion, celery, and carrots with a little water in a frying pan, just until the onions are soft and translucent (see photo).  Remove from heat and save.  Cut up chicken, place in pot, bring to low boil with stock and 1 cup water (see photo).  Skim off the froth from the top of the liquid in the pot.  Add vegetables, thyme, bay leaf, some parsley, salt &amp; pepper to taste.  Add additional water if necessary. Bring back to low boil, reduce heat and simmer for 2 to 2\u00bd hours.<\/p>\n<p>About 15 minutes before serving, bring soup back to low boil.&nbsp; Rinse noodles in a colander to get the extra starch off, add to soup and cook until noodles are done but still firm.&nbsp;
