We were with a crowd, so we ordered appetizers. On the appetizer menu was a dish labeled Sausage &amp; Spinach. Sounded good, so we tried it, and it was a hit with everyone. When the sausage is nearly done, begin saut\u00e9ing the spinach in a little olive oil in another pan. When the spinach has cooked down, toss it with the sausage and serve.<br \/>\n<\/div><\/div>\n<p><strong>Notes<\/strong><\/p>\n<p>Raw Italian sausage produces a lot of oil during cooking and will have to be drained and patted dry on paper towels before tossing with the spinach.
