It looked good, so I asked her to post the recipe and last night cooked up a pot for Ditalini and me. It didn&#8217;t take long to make, maybe half an hour to get the meatballs ready, maybe 20 minutes for the rest. It was delicious. The cinnamon and sweet potato give it a flavor I hadn&#8217;t encountered before &#8230; different in a delightful way. This recipe will definitely become a regular on the deMenthe menu!<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Moroccan Meatball Soup<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>4-6<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"1 1\/2 hrs\"><strong>Time:<\/strong> <span class=\"time\">1 1\/2 hrs<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-difficulty\"><strong>Difficulty: <\/strong>medium<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><br \/>\n<strong>Ingredients<\/strong><\/p>\n<ul>\n<li>4 tsp vegetable oil<\/li>\n<li>1 medium white onion, diced<\/li>\n<li>salt and pepper<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1\/2 tsp ground cumin<\/li>\n<li>1\/2 tsp ground cinnamon<\/li>\n<li>1 1\/2 lb lean ground beef<\/li>\n<li>2 medium sweet potatoes, cut into thin half-moons<\/li>\n<li>4 medium carrots, thinly sliced<\/li>\n<li>3 tbsp tomato paste<\/li>\n<li>7 cups chicken broth<\/li>\n<li>cilantro, chopped<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat 2 tsp oil over medium in a pot. Cook onions until they become soft, season with salt &amp; pepper. Add garlic, cumin, and cinnamon and mix well with a spatula. Transfer all to a mixing bowl and add beef. Using your hands, gently mix and shape into balls. Put meatballs on waxed paper until later.<\/p>\n<p>Add another 2 tsp oil to the pot and heat over medium-high. Add sweet potatoes and carrots and cook a few minutes, turning the potatoes and carrots over a few times. Add tomato paste and stir until the vegetables are coated, then add broth. Bring to a simmer and cook until the sweet potatoes start to become tender. Add meatballs and simmer until the meatballs are cooked through. Some recipes for Moroccan meatball soup call for it to be served over couscous, and probably have less broth than this version.
