We all loved it. Ditalini makes meatloaf too, but hers is fancier: she puts a roll of mozzarella cheese wrapped in sliced ham into the center of hers, and I&#8217;ll post that recipe one of these days. I&#8217;ve been craving basic comfort lately, so I started making my own meatloaf using a <a href=\"http:\/\/southernfood.about.com\/od\/meatloafrecipes\/r\/bl91023f.htm\" target=\"_blank\" rel=\"noopener\">simple recipe taken off the web<\/a>. Then, last week, my youngest sister (n\u00e9e&nbsp;Neufch\u00e2tel deMenthe) sent me a meatloaf recipe that reminds me of our mother&#8217;s, and that&#8217;s the one I&#8217;m going to share here. Her recipe is sized for a big family, but if you&#8217;re cooking for two it&#8217;s a simple matter to cut the ingredients in half.<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Neufch\u00e2tel&#039;s Meatloaf<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>4<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"1 hr\"><strong>Time:<\/strong> <span class=\"time\">1 hr<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-difficulty\"><strong>Difficulty: <\/strong>medium<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><br \/>\n<strong>Ingredients<\/strong><\/p>\n<ul>\n<li>\u00bd cup ketchup<\/li>\n<li>1\/3 cup brown sugar<\/li>\n<li>1 \u00bd tbsp prepared mustard<\/li>\n<li>2 tbsp cider vinegar<\/li>\n<li>\u00bd tsp ground nutmeg<\/li>\n<li>2 lbs ground beef<\/li>\n<li>1 cup crushed cornflakes<\/li>\n<li>2 eggs (beaten)<\/li>\n<li>2 tsp salt<\/li>\n<li>\u00bd tsp pepper<\/li>\n<li>1 small onion (chopped)<\/li>\n<li>\u00bc cup green pepper (chopped)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Make a sauce by mixing the following ingredients in a small sauce pan and bring to a boil: ketchup, brown sugar, mustard, vinegar, and nutmeg.<\/p>\n<p>Combine meat with the remaining ingredients plus half the sauce in a large bowl and mix well.<\/p>\n<p>Shape meat mixture into a loaf and bake at 350\u00b0F for 40 minutes. Pour the remaining sauce over the loaf and bake an additional 20 minutes.<br \/>\n<\/div><\/div>\n<p><strong>Notes<\/strong><\/p>\n<p>I cut the ingredients in half to make a smaller loaf and substituted the following: a cup of breadcrumbs for the corn flakes and Grey Poupon for the prepared mustard.
