{"id":294,"date":"2007-12-23T10:37:08","date_gmt":"2007-12-23T17:37:08","guid":{"rendered":"http:\/\/pwoodford.net\/blog\/?p=294"},"modified":"2008-11-30T12:01:38","modified_gmt":"2008-11-30T19:01:38","slug":"christmas-eve-clam-chowder","status":"publish","type":"post","link":"https:\/\/pwoodford.net\/blog\/?p=294","title":{"rendered":"Christmas Eve Clam Chowder"},"content":{"rendered":"<p>This is a second-generation Woodford family recipe, passed down\u00a0by my father.\u00a0 He made clam chowder every Christmas Eve and we&#8217;re going to carry on the tradition.<\/p>\n<figure id=\"attachment_1062\" aria-describedby=\"caption-attachment-1062\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/pwoodford.net\/blog\/wp-content\/uploads\/2008\/11\/clam_chowder.jpg\" alt=\"Dad&#039;s Clam Chowder\" title=\"clam_chowder\" width=\"400\" height=\"300\" class=\"size-full wp-image-1062\" \/><figcaption id=\"caption-attachment-1062\" class=\"wp-caption-text\">Dad's Clam Chowder<\/figcaption><\/figure>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1\/2 lb bacon<\/li>\n<li>4 carrots<\/li>\n<li>1 med onion<\/li>\n<li>3 or 4 potatoes<\/li>\n<li>1 cup celery<\/li>\n<li>12 oz frozen shrimp (51\/60 or 41\/50 count, peeled &amp; deveined, no tail)<\/li>\n<li>1 can evaporated milk<\/li>\n<li>1 can white cream of mushroom soup<\/li>\n<li>1 1\/2 cups whole milk<\/li>\n<li>1 can minced clams, w\/juice<\/li>\n<li>1 can sliced mushrooms<\/li>\n<li>2 tsp salt<\/li>\n<li>pepper to taste<\/li>\n<li>1 tsp thyme<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Fry\u00a0bacon and crumble; set aside.\u00a0 Chop\u00a0carrots and onion and puree\u00a0in a blender, adding a small amount of water.\u00a0\u00a0Cube\u00a0potatoes, dice\u00a0celery, and saut\u00e9\u00a0in the bottom of\u00a0a large pot with\u00a0the pureed carrots and onions, adding a little bacon grease, until\u00a0potatoes and celery are cooked but still firm.\u00a0 Add all the other ingredients, except the thyme.\u00a0 Simmer (don&#8217;t allow to boil) for at least 10 minutes.\u00a0 Add thyme.\u00a0 Add bacon just before serving, and serve the chowder with good crusty bread.<\/p>\n<p><strong>Notes<\/strong><\/p>\n<p>We doubled the recipe to prepare the pot of chowder in the photo.\u00a0 To double or triple, double or triple all ingredients except salt, which you should add to taste.<\/p>\n<p>Looking for a good pre-chowder appetizer?\u00a0 Try boiling large shelled shrimp in beer, water, and Old Bay Seasoning, serving with sliced lemon and cocktail sauce for dipping.<\/p>\n<p>If you enjoy cooking for friends, be sure to check out my <a title=\"Half-Mind Cookbook\" href=\"http:\/\/pwoodford.net\/hashblog\/?page_id=231\"><span style=\"color: #b85b5a;\">Half-Mind Cookbook<\/span><\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a second-generation Woodford family recipe, passed down\u00a0by my father.\u00a0 He made clam chowder every Christmas Eve and we&#8217;re going to carry on the tradition.
