Lemon Squares


  • Bottom layer
    • 1 c. flour
    • 1/4 c. sugar (or fructose)
    • 1/2 c. oleo
    • 1 t. lemon peel, grated (optional)
  • Topping
    • 1/4 c. flour
    • 3/4 c. sugar
    • 1/2 c. egg beaters or 2 eggs
    • 1/4 c. lemon juice
    • 2 t. lemon peel, grated
    • powdered sugar (optional)


Combine 1 c. flour and 1/4 c. sugar. Cut in oleo. (Add another teaspoon of lemon peel if you like lots of flavor.) Press into 9″ x 9″ x 2″ pan. Bake at 350 degrees F for 15 minutes, or until light brown.

Combine 1/4 c. of flour, 3/4 c. sugar, eggs, and lemon juice and peel. Beat with mixer and pour over baked crust. Bake 15 minutes or until done. Cool and sprinkle with powdered sugar. Cut with knife dipped in hot water.
