Pumpkin Bars


  • 1/3 c. sugar
  • 1/3 c. oil
  • 3 eggs
  • 1 1/2 (15-oz.) cans pumpkin
  • 1 pkg. Pillsbury Butter Recipe Cake Mix
  • 3 T. pumpkin pie spice, or (2 t. cinnamon, 1/2 t. ginger, 1/2 t. ground cloves, and 1/2 t. nutmeg)
  • 1 can vanilla frosting
  • 3-oz. pkg. cream cheese


Preheat oven to 350 degrees F. Grease and flour 15″ x 10″ jelly roll pan. Combine sugar, oil, eggs and pumpkin, and blend, using a mixer at highest speed, for 1 min. Add cake mix and spices. Blend until moistened. Beat 2 min. at highest speed. Pour into pan. Bake for 25-35 minutes.

Combine frosting and cream cheese at low speed until smooth. Frost when cake has cooled. Makes 36 bars. Store in refrigerator.
