Chocolate Mousse Cake


  • 1 6-oz. pkg. semi-sweet chocolate chips
  • 1/4 c. or 5 T. hot strong black coffee
  • 2 T. sugar
  • 4 egg yolks
  • 2 T. dark rum
  • 4 egg whites, stiffly beaten
  • For crust:
    • 1 1/3 c. chocolate wafer crumbs
    • 4 T. butter, melted


Insert metal blade in food processor. Chop chocolate fine (powder), scraping bowl as necessary. Add coffee and sugar, process until well-blended. Add egg yolks and run through top while running. (The food processor is running, not you!) Continue to process until well-blended. Pour into bowl. Fold in egg whites. Chill before serving.

Chop chocolate wafers into crumbs in food processor or blender to make 1 1/3 c. crumbs. Mix with butter. Press into round pan (spring form strongly preferred!) Bake 10 minutes at 350 degrees F. Chill before serving. Fill with Mousse. Chill. Release sides of pan. Slice. Serve.
