Lemon Bars Deluxe


  • 2 c. flour
  • 1 c. butter, softened
  • 1/2 c. powdered sugar
  • 2 c. granulated sugar
  • 1/4 c. flour
  • 4 eggs, beaten
  • 1/3 c. lemon juice
  • 1/2 t. baking powder


Preheat oven to 350 degrees F. Sift 2 cups flour and powdered sugar together. Cut in butter until mixture clings together. Flour hands and press into 13″ x 9″ x 2″ pan. Bake for 20-25 minutes or until lightly browned. Beat together eggs, granulated sugar and lemon juice. Sift together 1/4 cup flour and baking powder; stir into the egg mixture. Pour over baked crust. Bake at 350 degrees for 25 minutes longer. Sprinkle with additional powdered sugar. Cool thoroughly, then cut into bars. Yield: 20 bars.
